Turkey Blueberry Grain Burgers with Fig Jam and Brie


Tips and articles about healthy eating are everywhere- email, Facebook posts, magazines, newspapers and even posted on the elevator screen that riders stare at to avoid the uncomfortable 15 seconds of standing next to a stranger. A photographic memory is required to keep it all in, but every now and then one sticks. Today I share one such memorable tip.

We all know how quickly turkey meat becomes dry, especially ground turkey meat used in a burger. Mixing blueberries into the meat not only gives the burger a healthy antioxidant boost but it helps with a juicier result. Seriously. Tested and confirmed.

For this particular recipe I added quinoa and lentils, taking the health benefits one step further. The result is a blue-tinted fun and tasty burger. Fig jam and brie cheese step into the condiment spotlight to really takes this burger over the edge.

Even if you have no intention of making this exact turkey burger version, make note of this healthy tip. It's a great way to sneak nutrients into any Fat and Happy burger.

Flax Seed Crusted Sweet Potato Cake with Basil Dressed Kale Salad


Sometimes you accidentally create a dish so delicious, you gobble the whole thing down and then for days and weeks after you keep thinking about. Recreation was a must.

Using left over grain and a left over roasted sweet potato, I mushed them together and formed patties. A little crunchy crust comes from flax seeds. Where this really goes over the edge is the basil dressing and kale salad, completely flavor explosion against the warm sweet potato patties.

Use the left over grains you have in the house or follow my recipe brown rice, quinoa, lentil recipe. While you can substitute grains, definitely keep the sweet potato over a white.

Accidents happen for a reason....for a tasty Fat and Happy reason.

Beet Burger

I like to test out different eating styles just to see how my body reacts to them. Recently I decided to give up meat and dairy and gluten. Self torture is one thing, but implementing food limitations on other household members is a whole different story.

Mealtimes have become interesting at our house. For the most part, I create dishes that Dave can easily add cheese too, and in some cases meat. I also created a large batch of homemade buns that I put in the freezer for handy additions to his portion of the meal.

With the basics covered for Dave, it leaves me pretty open to create anything I want. Today I decided to create a veggie burger, something he could easily top with cheese and place on a bun.

I started with a zucchini because it seemed the most versatile; any veggie that can pose as a dessert can't be a bad thing! So a little zucchini, some beets, garlic and seasoning salt all mixed together nicely. The real struggle is the binding ingredient since I'm not using gluten.

Mediterranean Ground Turkey Kabobs with Cucumber Yogurt Sauce

Kofta is essentially a Middle Eastern name for meatballs or meat loaf. Most often you will see this in the form of a kabob (basically meat on a stick) but made from finely ground beef or lamb and often served with a classic tzatziki sauce.

Using turkey meat is not traditional but does offer a lower calorie meal. The trick with ground turkey meat is that it needs to be moistened and seasoned well, almost over-seasoned really, or it comes out dry and bland.

Using the cucumber juice, hot peppers and a few chopped olives along with the olive brine helps to stave off boring, dry meat. My scaled down cucumber sauce is simple but just the right topping for the turkey.

Put a slight twist on a traditional burger or meatloaf for your next casual barbecue, it's a Fat and Happy flavorful meal!

Chorizo and Habanero Cheese Stuffed Burgers with Creamy Cumin Lime Dressing

There is nothing more intoxicating than the first summer barbecue with the familiar sounds of the sizzle when the meat hits the grill and the smoke smell lingering smell in your hair.


And yes, my grill has missed my touch as as well. Like the dutiful cleaning time after the occasional fire from my too-fatty bacon that wasn't secured well around the pork tenderloin - these are the bonding moments that make my boyfriend jealous.

Our first time back together couldn't be ordinary, it needed juicy burger love. The chorizo and habanero cheese stuffing flavors the beef and keep it so juicy it drips on the fire just enough to impart the simple seasoned burger with classic grill undertones. Creamy cumin and lime spiked sour cream soothes the tickling heat of the habanero while the pea shoots have the taste buds screaming fresh.
