Warm Grapefruit, Avocado and Wild Rice Salad



Simple foods are usually the best. I'll admit that I can get caught up in complicated recipe, creating exttra dressings or sauces for 'another layer of flavor'. Spring is the perfect time to let go of these coveringss and let food shine on its own.

When I put this salad together, I wanted the freshness of the grapefruit to play off the nuttiness of the wild rice - adding a heavy salad dressing would just drown the flavors out. Using the juice that drips out of the grapefruit while you are peeling and cutting it moistens the warm rice (along with a touch of coconut oil) with a clean dressing that highlights the flavors.

Toss in fresh parsley and greens at the end for a crisp, familiar salad crunch and a hist of coolness against the cozy rice.

An air of crispness over a blanket of warm- just like Spring. It's the perfect use for leftover wild rice  and a great reason to cook it if you don't have any leftover.

African Sweet Potato Almond Stew


I have fond memories of an underground dinner in Buenos Aires where the first course was an African Peanut Soup. It was creamy with a defiant touch of peanut butter. This recipe is a play off of what I remember that soup to be, subbing in almond butter for a healthier boost of good fat and protein and adding in sweet potatoes and kale to really add to the veggie count.

Served as a stew, my version is chunky and hearty with a rich and creamy sauce, slightly less sweet without the use of store-bought peanut butter. A blend of sun-dried tomatoes and an ancho chili pepper give more depth and flavor than using just plain tomatoes. A touch of vinegar at the end adds just a hint of brightness; sub a squeeze of lemon or just skip this step if it makes you nervous.

It's the perfect stew/soup for those still riding out freezing temperatures; just cup your mug, close your eyes and let the flavors take you to a warm sunny spot south of the equator.

Finger-licking, Stupidly Yummy Chocolate Pudding with Whipped Coconut Cream...and it's good for you!

Sitting at my computer with a belly so full from this pudding it's hard to breath, but so worth it. I wondered what to call this. I thought about how I licked the spoon two, three, eight-hundred times, then dug my whole fist into the blender to scrape out every last little drop. The whipped coconut beaters got licked before they were even off the blender (luckily I still had enough wits about me to unplug it before my tongue met the wrath that my morning eggs do). I thought I was in heaven at this point, but then, my spoon of chocolate fell into the whipped coconut cream and it was like I stepped into the VIP cloud.

Yes, it's that good. And the best part is that I don't even feel guilty- it's all good, clean food! We are talking avocado, raw cacao powder and coconut milk. No refined sugar, no funny chemicals or preservatives, no gluten, not even any dairy. Disclaimer- this should still be considered a treat and not eaten every day because we are still adding in natural sweeteners, and even those need to be kept in check. Plus if you eat anything every day it's will lose its appeal.

Cauliflower Rice with Middle Eastern Flare


January is the time of year to clean up our eating, ease up on our digestion system and undo some of that Holiday heaviness. Clean doesn't mean flavorless. Let me say that again - clean doesn't mean flavorless. It does mean you have to get creative.

Take a head of cauliflower- a very simple vegetable that can become a vessel to absorb other flavors. It's a great to thicken soups and even make a cheesy sauce out of. Today we are letting the cauliflower come alive with the addition of dried apricots for sweetness and toasted almonds for crunch.

It's so simple yet so satisfying and delicious. Perfect on it's own or serve it as a backdrop with grilled meats or a Moroccan tagine. Eat up, be delicious and get happy with no deprivation. The best part that you could use this happy healthy recipe year round!

Yummy Walnut Butter and Banana Toast


Seems 99% of know what peanut butter is, in fact many of us grew up with it in our cupboards. It's a simple formula, grind nuts to a smooth, spreadable paste. Maybe add a touch of salt, but nothing more is needed. A pretty simple concept really. But have you looked at the ingredients in PB lately?

Take a look and you'll find sugar and hydrogenated oil, both are terrible for our health. Hydrogenated oils are chemically altered, containing unsaturated fats that have had hydrogen atoms added to their structure, making them more solid and turning them into trans fats which are linked to heart disease, obesity and diabetes. Our bodies don't recognize this as food, all it can do is try to fight the free radicals clogging your bloodstream and damaging your cells.

So, what to do instead? Make your own nut butters in minutes. The benefits of making your own nut butters far outweigh a jarred variety. You can control the ingredients and what goes into your butter. For instance, how much salt and sugar, if any. But even better, you can make nut butter from any nut. AND you can add additional flavorings - like cinnamon and raw cacao! Genius.

Today we are making a simple walnut butter and then slathering it on warm toast with touch of honey, cinnamon and a few banana slices. So good and nourishing- it's great as a snack or breakfast.
Blend up a walnut nut butter today, it's one small step to healthier and giant step to yummy!

Strawberry Walnut Milk


I've never really been a milk fan. I can't even remember drinking a glass of milk as a kid. But there are great uses of milk, such as in a smoothie.

Dairy is a controversial things these days and I'm not about to tell you whether you should or shouldn't be eating dairy or if it's right for your body; that is something you need to use your intuition for. (As a Health Coach, I can help guide you in this area.)  But, this Strawberry Walnut Milk is dairy free - so you can set the controversy aside on this one.

Raw walnuts blended with fresh berries and a touch of almond, it's creamy and delicious. Walnut milk is rich with omega 3's which lowers cholesterol, reduces high blood pressure and improves arthritis symptoms. So blend up and drink up!

Quick and Easy Quinoa Breakfast Porridge


Every Sunday I make a huge batch of grains to use for the week. Usually it's quinoa, sometimes it's brown rice or lentils and often it's a mixture of all three. Whatever it is, it's stored in the fridge and becomes a base for lunches and dinners...and yes, even breakfast!

Think of the quinoa as oatmeal- it's kind of a vessel for the cinnamon, nuts and maple syrup.  And just like oatmeal it's completely versatile- add what you like. Raw honey instead of maple syrup, bananas and almonds in place of the walnuts and goji berries. Just have fun with it!

This is a great breakfast to toss together in a glass jar on your way out of the house and then enjoy when you get to work! Easy healthy fat and happy breakfast, it's the most important meal of the day!

Avocado and Spinach Breakfast Parfait

St. Patrick's Day calls for green. Green shirts, green rivers, green beer and green eggs and ham. Last year I made this luscious homemade creme de minth. But this year I'm sticking to the healthy-side of the green holiday with a super nutritious avocado breakfast parfait.

Sweetened spinach and avocado yogurt layered with fresh fruit and topped with almond and date granola. Delicious and filling! It's a great way to get your leafy greens and healthy fats in at one time. Avocado and almonds, while both calorie heavy,  are super important for energy, keeping our skin healthy and for proper functioning nerves and brain.

Nutty Snack Bar

Recently I led nearly 20 people through a detox resulting in healthy glowing skin, weight loss, reduction of inflammation, improved digestion and happier attitudes among a plethora of additional benefits. During this detox we gave up all processed foods; it was important to cook most, if not all, of our own food.

Healthy, homemade snacks became important as we noshed on clean foods like carrots, hummus and avocado. Towards the end of the detox I yearned for something that is a little bit like a treat and I wanted a snack I could take with me on the go. That's when I tossed this recipe together and it really hit the spot.

These bars come together in a snap. Use whatever ingredients are in your pantry and cut them to whatever size works best for you. I like to make little bite-sized pieces for when I'm at home, but I cut some into a bar size to take on the go with me. Always remember moderation is key with all foods, these tasty little snacks can become addictive so it's best to portion them out

Chocolate Mousse Cups: Gluten, Dairy and Sugar Free!

It's that time of year where sugary treats become a staple in our diets. I set out to make a dessert that is delicious but also free from sugar, flour and dairy.

I'm a big proponent of dark chocolate for its healthy properties and I love to use maple syrup in place of sugar. The rest all just fell into place- using almonds to make a dairy-free, protein rich milk and a little coffee and Grand Marnier for a hint of flavor to create a deep, creamy chocolate pudding-like mousse. Really nice.

This is the time to use your cute ramekins or little glass containers. I used a number of different dishes for a more rustic effect. If you are OK with powder sugar, sift a little on top for a finished look. If you are eating dairy, top with a little whipped cream. Or creme brulee the top of each with a bit of sugar and a kitchen torch.

The other thing I really like about this dessert is that you can serve it hot, right from the oven or serve it chilled. The preference is yours. Perfect for a brunch and even better ending a cold night; either way this Fat and Happy treat is one you can eat and without the guilt.

Final moving days, napkin hoarding has begin and simple Overnight Refrigerator Superfood Oatmeal recipes


Think back to college days when money was nonexistent and healthy food was something only found in textbooks.
We raided every cafeteria and fast food joint in town for napkins, plastic silverware and assorted condiment packages, know which ones had the best of each. Funny how we always had plenty of plastic red cups though.

We are now a day away from our actual move, everything is in boxes including all silverware and my cloth napkins. I'm tempted to relive those college days of hoarding silverware packs and napkins from restaurants; my strive to be green is tested but wins out as I rip the tape off the box marked kitchen #15 to retrieve a couple of forks and knives. And aside from Chinese mustard there isn't a food in a condiment package I eat.

But that leaves me to question what can I make that doesn't involve me unpacking a lot of pans and utensils? I want to have something that is pre-made that I can just grab and go. Something fresh and healthy but hearty to keep us strong for the move but isn't nasty take-out food.

Overnight refrigerator oatmeal isn't an original Fat and Happy creation, but I really do like the variations and flavors I've come up with. It lasts in the fridge for a few days and doesn't require perishable food. Just some oatmeal, a few nuts and some fixings like frozen berries and chia seeds. Drop it all in a jar, screw on the lid and let it do its thing. Grab one out of the fridge for an easy ready made meal or snack.

Both the Blue and Goji Berry Vanilla Oatmeal and Cranberry Pumpkin Oatmeal turned out stunning for me. You could make hundreds of versions by varying the ingredients of fruit, nuts, seeds, milk or coconut flakes; they all offer endless possibilities. This is an easy recipe to add super foods like goji berries, chia seeds, maca powder, cocao and more. Use frozen fruit because it offers extra juice as it defrosts.

These are great recipes whether you are moving or not. Imaging throwing one in your bag for after a work out or as breakfast on the go; you can eat them chilled or warm them slightly. They are pretty cheap on the pocketbook and if you're a clean eater you may not even need a napkin. You will, however, need a spoon; but you know where to get that.

Healthy and Delicious Chocolate Fig Smoothie

I greet every day with a smoothie and my birthday day was no different. Though I did yearn for something that felt a little indulgent I didn't want to start my day down a path of destruction by 7am.

My special day smoothie would involve fresh figs, I knew that much for sure since a few figs found their way to me via a local CSA. Chocolate just seemed to be an interesting compliment to the figs.  Thanks to the raw cacao stocked in my pantry I got a great antioxidant boost without turning my healthy breakfast treat into a diner-like fattening shake. The almond milk and hemp seeds pack in a big boost of protein too.

This smoothie is so rich and delicious, you would never guess it's packed with so much nutrition and protein. Start any day with Fat and  Happy love in your glass, you just may have to admit you like healthy foods.

Easy Spring Rolls with Hoisin Almond Sauce

Bookmark this one as another recipe for Meatless Mondays. It's simple, fresh  and versatile, a perfect way to ease into the Spring season.

The glass noodles are a great option for anyone gluten free and the radish is good for digestion. I use crushed walnuts instead of peanuts and almond butter instead of peanut butter to give the rolls a healthier boost.

The spring rolls don't have to be vegetarian; add in chicken, shrimp or other protein as desired. I also like to add in a little chopped chili pepper for spice. Or try adding arugula to get your greens in. See what I mean about the versatility?

If you have been hesitant to try making spring rolls in the past, I'm here to tell you it's not hard. Plus, you can still eat your mistakes if they fall apart! That is Fat and Happy cooking right there.

Easy Peanut Butter, Banana, Chocolate Bites

Eating healthy deserves a treat beyond an organic carrot. And it doesn't mean creamy, yummy desserts and snacks have to go by the way side.

This isn't necessarily new, but still worth a second look. A simple banana slice topped with nut butter and a little dollop of chocolate. If you are feeling really sassy, try topping with a little salt or cocoa nibs.

Eating these right away offers a decadent, creamy and satisfying bite. Store in the freezer if you enjoy frozen bananas.

Chai Tea Latte - Infused Oatmeal


Turning healthy is often confused with tasteless, unsatisfying dishes.

Flavor packed smoothies have been my breakfast of choice recently, but there are days when good old fashion stick to your ribs oatmeal is a must.

I'm also a fan of simple tea, but I still turn to a chai tea latte when I'm looking for something warmer and filling. Being dairy free doesn't mean giving up the latte, it just means it's time to get creative.

And getting really creative means building layers of unexpected flavor. Steeping almond milk with chai tea and cooking it in oatmeal is the quintessential warm, hearty, mind-blowingly healthy breakfast and it couldn't be easier.

Fat and happy is turning healthier, but not flavorless.

Super Simple 4 Ingredient Flourless Cookies


Did you ever make bread cookies when you were younger, where you took a piece of Wonder bread, removed the crust, smooshed the dough into a shape and then baked it?

These cookies are a little like that; a real lowbrow kind of cookie. But one that will you get you through a midnight craving painlessly. Or one that can sub in for a cheap dessert when your assigned dessert guest didn't bring the dessert.

Did I mention these are gluten free too? A hell of a lot easier then working with xantham gum and potato flour. The chocolate cookie is slightly more work than the peanut butter cookie, but worth it.

Too me, the topping and optional ingredient is key. I've tried everything from basic chocolate chips and jelly to rice krispies and smashed potato chips. If you are making cookies at midnight, bold toppings are a must.

These kinds of cookies are a dime a dozen all over the internet. But now you have them at your fingertips.The base of each cookie is four ingredients, that number will increase if you add the options.

Take these cookies for what they are worth - the simplest form of cookie for emergency fat and happy moments.

Bluberry Oatmeal Smoothie: To Hemp or not to Hemp


To hemp or not to hemp? Before you answer that question, ask this one: "Are you having a drug test any time soon?"

Allow me to explain. I've been using hemp seeds as a source of protein for a few months now. Hemp seeds are nutty in flavor and slightly crunchy. They can be eaten raw, made into milk, prepared as tea or ground into meal. Besides topping my salad, I've be making a homemade hemp milk for use in my morning smoothies. Smoothies that are enjoyed not only by me, but by my guy.

Enter a new job opportunity for said guy; an opportunity which requires a drug test. I do the first thing any normal, non-drug using individual would do at this point - I Google it. What I find is hundreds of articles, each one contradicting the last. In a skeptical and wavering voice I notify my SO that he is in the clear; no doubt he felt there was a bit of a white lie hidden in my delivery. But one of us worrying about it was enough. I offhandedly suggested we stop mixing hemp smoothies until the result of the drug test were in as a precautionary measure.

In the meantime, my research over hemp seeds deepened. My understanding is that Hemp seeds (and oil)  have a range of 5-10 ppm THC. So failing a workplace drug test is extremely unlikely. Unlikely is not a definate, but it's fairly firm.

If you need to play the straight and narrow for a few weeks, go sans hemp with my Blueberry Oatmeal Smoothie. It's made with almond milk. Then, when your results are in, fire up the hemp smoothie for a celebration.

Watermelon Thai Gazpacho

If there is a downside to buying a watermelon, it's gotta be the looming question of what to do with the reaming after you eat a cup of it. I was staring at a mound of juicy red melon and was saddened at the thought that it might go to waste.

Coincidentally, I had planned to make a couple of different variations of gazpacho for an afternoon birthday party. Watching the peppers whirl in the blender gave me the idea to turn the watermelon into a soup.

Toasted almonds give this watermelon gazpacho texture while the ginger and hot pepper tingle the Thai senses.

This watermelon soup could be a great appetizer, lunch or amuse bouche even. It was a hit at the birthday party and will turn any event into a fat and happy party!
