African Sweet Potato Almond Stew


I have fond memories of an underground dinner in Buenos Aires where the first course was an African Peanut Soup. It was creamy with a defiant touch of peanut butter. This recipe is a play off of what I remember that soup to be, subbing in almond butter for a healthier boost of good fat and protein and adding in sweet potatoes and kale to really add to the veggie count.

Served as a stew, my version is chunky and hearty with a rich and creamy sauce, slightly less sweet without the use of store-bought peanut butter. A blend of sun-dried tomatoes and an ancho chili pepper give more depth and flavor than using just plain tomatoes. A touch of vinegar at the end adds just a hint of brightness; sub a squeeze of lemon or just skip this step if it makes you nervous.

It's the perfect stew/soup for those still riding out freezing temperatures; just cup your mug, close your eyes and let the flavors take you to a warm sunny spot south of the equator.

Five Spices Pumpkin Soup with Orange Pepper Cashew Cream


Pumpkins are a dime a dozen this time of year, hence the many of them adorning my counter tops right now. I've been playing with a crazy number of recipes that you will be seeing here soon.

Since our biggest eating holiday is coming up next week, I'm going to post a simple pumpkin soup recipe first. In this soup I used a touch of Chinese Five Spices to give a little flavor twist over the typical pumpkin soup. It's an interesting mix of cinnamon, clove, pepper, fennel and anise. It marries quite well with meats but you'll find it sweet, savory and complex in this soup. If you haven't tried this spice blend before, you may find yourself become immediately addicted to it and find yourself putting it on everything. It's quite concentrated so a little goes a long way.

Orange Pepper Cashew Cream tops the soup in a creamy, non-dairy way. If you haven't made a creamy, dairy substitute out of cashews before, now is the time to try. It's super simple, just add cashews and water and blend.

Pumpkin, Couscous and Chorizo Stuffed Jack O'Lantern Peppers


Ever wonder who the first person was that decided to carve a pumpkin?  And who thought eating that hard gourd was even possible? Lucky for us that person (or persons) were inquisitive as we now reap the benefits.

Since pumpkins are synonymous with Halloween I thought we should carry that theme even further into the kitchen with these adorable, delicious stuffed, decorated peppers.

The couscous choice was merely one made based on our upcoming move (the more pantry items we eat, the less we have to pack and move.) Substitute in rice, quinoa or other grain of your choice. After baking, the slightly wilted pepper mixes with the pumpkin, the chorizo, the creamy goat cheese and the tart dried cranberries for a glorious spooky bite.

I've roasted a lot of pumpkins but only recently heard that you don't have to scoop out the insides before roasting, but rather leave the insides in tact and scoop out after roasting. This made me curious so I did a little experiment by roasting half of the pumpkin cleaned out and half not cleaned out. The results were pretty much the the same, a dreamy creamy roasted pumpkin; though I found I preferred cleaning out the pumpkin first, maybe just for nostalgia sake.

Squash and Pea Shoot Salad Bruschetta

Bruschetta is nothing more than a good piece of bread acting as a vessel for some yummy toppings. You almost can't go wrong with any combination you put together.

Today I pair the long awaited butternut squash with a light radish and pea shoot salad for a lovely Summer meets Fall version. Rounding out the flavors is the orange parsley dressing. It's light yet hearty, soft and crunchy all in one bite. Delicious.

This is definitely a 'use a fork and knife' brushetta over a simple 'pick it up and take a bite' one and that just adds to the dishs' depth and character.

Try this out as a plated appetizer or salad course at your next dinner party- you'll get some well deserved Fat and Happy kudos!

Garlic Roasted Squash Grilled Cheese

It's that time of year when my backpack starts to get real heavy. Not from schoolbooks but from squash and pumpkins! Nothing says fall more then seeds roasting in the oven.

Roast a squash and you will have the base for a variety of meals from squash soup to ravioli. Today's recipe takes a classic grilled cheese and ups the ante by adding in garlic roasted squash. It's a perfect dish for left over squash or try it with pumpkin too.

Use any squash you prefer, I had butternut squash on hand. It's low in fat, filled with fiber and offers significant amounts of potassium  (important for bone health) and vitamin B6 (essential for the proper functioning of both the nervous and immune systems.)

Add a squash to your shopping  bag and lift from your legs, not your back for this gooey, delectable Fat and Happy sandwich.

Recipe Swap: Pumpkin Maple Zabaglione over French Toast


Zabaglione - sounds fancy, doesn't it? Simply put, it's a delightfully light egg and alcohol custard. Deceivingly easy to make, the required constant whipping creates tiny bubbles that give this custard its light and airy 'foam' texture.

There are many versions of Zabaglione but traditionally it's a dessert made with Marsala and often served with fruit or spooned over a cake.

Because this is a Recipe Swap, how could I stick with a dessert version? Savory ideas from cheese to spicy pepper meandered through my mind, yet the idea of a sweet custard would not stop interfering.

A Pumpkin Liquor sent by great friends as a Strange Ingredient gave me the inspiration and base for this recipe. Imagine a Pumpkin Zabaglione with a hint of maple dripping down the side of buttery golden brown french toast. Plus Dave loves french toast and I've been forcing him to eat a lot of healthy dishes this past week, so it will be the perfect surprise breakfast.

Pumpkin Cookies with Orange Ginger Filling



There is something about this time of year - we all get completely possessed. I'm not talking about ghost and devils and Halloween, but rather pumpkins. Those tasty, crazy, fat, heavy, orange pumpkins - their vines wind right through our ears and overtake our brains resulting in pumpkin cravings for everything. Cookies, bread, martinis, facials and even pumpkin foot massages!

I'm not one to fight the cravings but rather feed into them; so here is one more fat and happy pumpkin cookie recipe for you.
