Turkey and Mushroom Meatball with Olive Cream Sauce over Sweet Potato Pasta



I'm constantly tip-toeing the line between healthy food and food that others actually want to eat. For the record, my friends do like the food I create, but they also crave those classic fatty comfort dishes...especially during these blasted cold months.

In this comfort dinner redo of classic spaghetti and meatballs, swapping sweet potatoes for pasta may seem completely out in left field, but when quickly sauteed in a touch of butter these faux 'noodles' are delightfully chewy and satisfying.  Yes, I did say butter; once in a while a touch of high quality butter really does the trick (though ghee, olive oil or coconut oil would all work as well.)

To take the sweet potato linguine a step further I tossed in a garlic cream sauce made from cashews. I know it sounds weird but if you haven't tried making cashew sauces, you really need to. Cashews are the new bacon ... not quite. But they create an amazing base for desserts, mayos, dips and so much more.  My olive cream sauce has a bite from the raw garlic, but the salty spicy combo shines against the buttery sweetness of the 'spaghetti'.

Chickpea Pancake with Pulled Pork, Lemon Gremolata and Eggs



Mixing breakfast with typical dinner items gives me great pleasure.  Why do we not have pancakes in the evening and pulled pork in the morning? Who imposed these limits?  I for one am not going to follow them.

Enter the chickpea pancake, topped with pulled pork, runny eggs and a tart lemon gremolata. Breakfast? Lunch? Dinner? Could be made for any of them- even brunch!

When you serve this, don't mention that this dish is gluten free, nobody will notice. The chickpea flour is filled with protein and gives a really yummy and hearty base for the eggs and pork. This is the perfect dish for left over pulled pork; of course you could substitute in chicken or turkey if you like. Lemon gremolata tops the dish with a touch of freshness.

Break through the meal time barriers for a fat and happy dish, you'll be glad you did!

Shrimp Boil Fajita with Tabasco Corn Relish

Fat Tuesday is just a few days away and  I feel the need to get into the spirit early due to a hankering for some shrimp and sausage. I wanted to make a shrimp boil, it's pretty simple as there are only 4 main ingredients to it: shrimp, andouillle sausage, potatoes and corn... on the cob.

This is Chicago and we are in the middle of a polar vortex, there are no cobs of corn to be found here. So I had to adjust my plan. I decided to skip the boil portion and just cook the remaining ingredients in ghee and lemon. Ghee is essentially clarified butter, the milk and water solids have been boiled off leaving rich, golden butterfat.

Whoa you say- butterfat can't be healthy, can it? Ghee stimulates the production of stomach acid, increases the absorption of other nutrients, and is very supportive for acid reflux, ulcers, and other digestive complaints. Ghee appears to help lower cardiovascular risks, but with everything you must enjoy in moderation. It also has a higher smoke point so great for high temperature cooking. Because it's free of casein and other milk solids, if you are intolerant to butter you might be able to eat Ghee

So the shrimp and sausage were covered, but that leaves the corn, what to do with the corn. A simple toss with some red peppers, lemon and tabasco and I ended up with perfect  relish topping for my shrimp and sausage saute. Add a tortilla and I essentially ended up with a fajita-like dinner.

Get out the beads and get your taste buds ready with this Fat and Happy fajita-like Shrimp Boil (sortof).

Polenta Amaranth Cake with Mascarpone, Whipped Cream and Blueberry Sauce

This Gluten Free dessert rounded out a special dinner party, below are a few of the excerpts from this course:

"OMG! This is so good, we didn't wait for you to come back and sit down, we all ate ours already."
"With these flavors, this could be a served as a breakfast dish.?"
"This was gluten free?"
"I licked the dish."

Using polenta and amaranth as the base for the GF cake gives this buttery cake an intriguing nubby-ness texture. The vanilla whipping cream and the mascarpone begin to slowly melt from the heat of the warm cake and the blueberries. Just thinking about it makes me want more.

The polenta amaranth cake comes together in minutes as does making homemade whipping cream. The Blueberry Compote mixture takes the longest to put together at 20 minutes, but this can be made ahead of time and simply rewarmed before serving.

Part of the allure of this dish is the way I served it - in little glass jars. (Glass yogurt jars I emptied out in an Argentinian airport bathroom and smuggled into my luggage!) Besides being ridiculously cute, it helps to keep in the warmth of the cake and contain the melting creams. If you don't happen to have cute jars, this looks great on a plate too- see the photo below. Do serve these in small portions, too much richness can ruin the entire effect.

End your next dinner party with this spectacular Fat and Happy Polenta Amaranth Cake with Mascarpone and Blueberry Compote; beware that your guest may not wait for you to return from the kitchen before they dig in. And that is a good thing.

Casual New Years Meal: Tequila-Drunken Mussels and Chorizo with Roasted Peppers


This New Years eve I'm looking forward to a simple night at home. No big fan fare, no cover charge and no waiting for a cab. The holiday season has taken its toll on me and I'm looking forward to curling up with a good movie; perhaps a rousing game of Wii tennis just to get the blood flowing.

The food for the evening needs to match my casual plans: comforting but not heavy. December is prime mussel month and it would be a shame to not take this last chance to enjoy them.

Adding tequila to a classic wine broth along with the lime really adds a punch to the mussels; these are stout, not for the faint boozer. The chorizo and roasted peppers add heartiness to the meal.

Enjoy Fat and Happy mussels and chorizo for the casual night at home. This dinner filled two of us with a few uneaten mussels and sausages left over. It could be stretched for four if you are light eaters and/or have an appetizer or dessert planned.

Flavored Popcorn


A close friend is marking half a century. Friends and family from all parts of her life are coming together to celebrate with an evening of elegant picnicking and lighthearted roastings.

I struggled with what dish to bring that was carefree, simple to pack and move around and that stands up to the weather. To add to that, I was given her AARP card that showed up in the mail to do something creative with. Let me deviate from the recipe for a moment to say we are talking about a women who has a better body than any one half her age, stunning looks and has the fun attitude to go with it it all. Simply Fabulous!

Somehow I landed on the idea of making serving bowls out of copies of her AARP card. From there, it was easy to come up with a snack to fill those paper bowls - flavored popcorn.

Two easy recipes but wildy different in taste. The Parmesan and Oregano Popcorn is rich and buttery while the Indian Spice Popcorn is exotic and finger licking good.

Everyone loves popcorn and these are fun, simple favors for all fat and happy ages.

Portabella and Proscuitto Quesadilla with Red Pepper Tomato Soup


Even in the dog days of summer we are typically greeted with one day of impending chilly fall weather. It's a rare opportunity to let summer produce warm us from the inside.

This proscuitto and portabella mushroom mixture is absolutely fantastic! I don't want another quesadilla without it. But its more than just a filling, I could see this as an omelet filling or a topping for bruschetta or on a big fat juicy steak.

The soup is a simple one chocked full with nutritious veggies; adding the summer squash gives a hearty freshness not found in a typical tomato or pepper soup.

Make any time of the year fat and happy with this delicious soup and quesadilla combo.

Flavored Butter: Sun-dried Tomato and Herb Butter


 One of my favorite late night bar snacks is a trio of butter and salt with a side of bacon at 694 Wine Bar in Chicago. Three amazing butters from three different regions sprinkled with three equally stunning salts. Oddly enough, three of us meet there late at night about every three months to indulge in this cholesterol-raising treat.

My second favorite butter appetizer is at Cyranos Bistro. This flavored herb butter is delivered along with a basket of warm bread and it is finger licking delicious. Give me an order of the herb butter along with a house made pate and I'm completely fat and happy.

With a party approaching, I wanted to create a touch of restaurant essence at home. With only one butter choice on hand it was an easy decision to make a flavored butter. The plan was to create a  butter spread for my homemade buns with the option to add thin slices of ham for a full sandwich. It needed to enhance the meat and also stand on its own melted into a warm slice of bread without overwhelming either.

This is when random condiments in the fridge come in handy. A few sundried tomatoes for depth, a little parsley and lemon to lighten it up and a touch of honey to add sweetness - this butter is fantastic!
